A very special heritage apple, developed in France in the 1600s, the name translates to Calville's white winter. A greenish/yellow apple that can develop a red blush, notable for their lumpy appearance. Moderately resistant to black spot. Mainly known for their excellent flavour as a cooking apple, commonly used for tarte tatin because they keep their shape when cooked (much like Golden Delicious), but can also be used to make excellent pie filling or apple sauce by cutting them into small pieces for cooking. Have very high levels of Vit C. Pollination group 3, so likely to be pollinised by others in the same group, e.g. Akane, Bonza, Cox's Orange Pippin, Crofton, Red Delicious, Fuji, Gala, Golden Delicious, Granny Smith, Jonathan, Kingston Black, Lady Williams, Pink Lady, Spartan, Sturmer Pippin.
